Favourite American Style Pancakes

These are soft and thick but amazingly light all at the same time. And you can always make them dairy free too, use almond milk and sunflower oil instead of milk and butter. Makes enough for a couple of people. 

  • 1/2 tablespoon baking powder
  • 115g self raising flour 
  • 1 large egg, beaten
  • 15ml sunflower oil (or melted butter)
  • 150ml milk 
  1. Mix all the dry ingredients in a bowl. 
  2. In a separate bowl, mix all the wet ingredients together.
  3. Make a well in the dry ingredients and pour in the wet ingredients and mix. Do this in a few stages to prevent any lumping. 
  4. Heat some oil in the pan, and pour some batter into the pan. A large serving/cooking style spoon is a good size for one pancake. 
  5. When the upper side is bubbling, it's time to flip it and cook the other side. Takes a minute or so for each pancake. 
  6. Serve hot with lashings of maple syrup.
